Poland and Eastern Europe influenced Jewish culture so significantly that is is difficult to parse what is Polish and what is uniquely Jewish.  Pierogies? Polish.  Borscht? Polish.  Potato Pancakes? Polish. Herring? Polish. A trip to Poland is a trip to the Old Country and a revelation of so much of Ashkenazi culture. Poland also offers the opportunity to bear witness to the catastrophe of the Holocaust, which makes exploring the resurgence of Jewish life there today all the more dramatic.
